The subtitles are also useful as there are many different dialects and the subtitles give a neutral or common standard that is easily understood throughout the country.

I also think it is a clever way for editors to have the upper hand on how viewers perceive their content. They use different colors and fonts to highlight key points in the conversation as if to say, "See this is the interesting / surprising / funny / entertaining / shocking point!" Like a subtle guiding hand to becoming the kind of viewer that the network wants.
