Good question! If I remember correctly, the column tops are attached to the mass so to make them higher, you can just raise the mass.

You need to activate the "Roof by face" command first before Revit can let you pick individual surfaces.

In the column family (not the canopy massing one), you can try switching its category and see if Column is an option.
