Hey bra not trying to rain on the parade but, take the dimensions of your bracket, draw it up and ask a joint with a cnc plasma cutter about cutting you out a lot (3mm sheet of mild will run you 300 bucks +-), then all you have to do is fold them, holes will be perfect every time, no need to make a jig or anything, no need for welding, it'll cut down production time from like... 30 minutes each if you're smashing out the welds and have a jig to tops 5 minutes each And mild vs stainless wont matter if it gets painted anyways Another thing, work on tapering off your heat input, in stainless its easy as piss to see, but work on going hotter and faster I noticed you're only running 50 amps, general rule... 40 amps per mm of material, 3mm=120 amps and absolutely smash em out, turn down a bit if you're not upto speed Common mistake with tig welding people make is going cold trying to avoid heat input, then you end up sitting around for ages pumping heat in waiting to make a weld puddle. Heat isn't necessarily amperage, time = heat. Quicker you get the weld done the less heat you put into it
