Former Mars/Wrigley employee here. The lime flavor was changed to green apple due to the popularity of green apple flavored candies in the category, not because it tasted too close to lemon as some say. The lime flavor was ultimately brought back, not because it wasn't a great flavor, but because it was discovered that the overwhelming majority of Skittles consumers ate small handfuls at a time, and the green apple was a bit overpowering and didn't have as pleasant of a taste as the lime when mixed with the other flavors.
