I haven't finished the video, but the 101 comes from university class numbering! The first number indicates year level, while the second and third numbers are the course numbers. Traditionally, introductory courses are numbered 01, which makes 101 the most beginner/introductory course in a given subject. In this case, the subject would be rice!

I've cooked rice since ever, but this is the frist time I heard about soaking the rice before you cook it. I was hoping that Rie could explain the benefit of soaking vs cook it straight away after washing the rice. Also, I thought washing the rice on the strainer was westerners' thing so I was surprised that Rie did it as well in the video. I always wash rice in a bowl that the rice cooker came with couple of times until the water is clear.

as far as im aware, not really used in japanese cooking as its a long grain rice. most japanese rice, especially rice used in onigiri and sushi, is short grain rice. short grain is used because it has more starch, which equals more stickiness needed for those dishes. smaller grain = more starch.

101 is first level course of a program in your first year. Let's say your program is 'food' you might have the following: Food 101: Rice 1 Food 102: Rice 2 Food 103: Egg 1 etc When you get to your second year, you might have: Food 201: Rice 3 Food 202: Fried Rice 1 The same series of class might continue across the same level (101 & 102), or might move up to next level (102 - 201). Typically classes of the same level don't require each other as a prerequisite, but lower-level might be required for the next level (101+102 might be required for 201). So 101 is completely foundational and usually doesn't assume any prior knowledge. In this example, "Fried Rice 1" sounds like an intro level, but is a 200 level course and may assume and require info from 101,102, and 103.
