Even though the vast majority of you understood the Tom Petty reference was a heartfelt tribute to one of my favorites, a few poor souls, for reasons only they understand, did not. They thought I was somehow using his tragic death as fodder for a joke. That's some dark stuff right there. Anyway, just so everyone is clear...in particular these people who spend most of the day looking for things to get upset at...I was a huge fan, and was very much saddened by his passing, and decided to honor him the best way I know.

The famous-person-name-drop-reference was tastefully done as always. By the way, next time you make chicken wings, maybe try a sauce of equal parts Frank's Hot Sauce and butter. Or more hot sauce than butter if you like depending on how spicy you like your wings. Afterall, you're the Don King of how you toss your wings. That's real deal Buffalo style.

I always add rice flour to my aall purpose flour for my fried chicken, I use bobs red mill as well. It makes it airy and crispy. Ppl always ask what's my recipe. Never thought to try rice flour alone, very nice

didn't have any rice on hand but had some puffed rice from the Indian store (muri) steamed rice puffed, no fat. Stuck some in a ziplock bag and lightly bashed with a rolling pin. then followed the dredging as you instructed. Wonderful texture and very crunchy

Due to my girlfriends wheat allergies, we have been making fried chicken with white rice flour since we started dating. We also found that a mix that is 1/2 white rice flour and 1/2 cornstarch (with a little baking soda) works quite well for fried chicken.

One coating I like using for my chicken is crushed oatcakes and self-raising wheat flour. Crush that all together finely, with your spices too. Egg (or water) wash, coat the chicken, leave to settle for a bit while preparing other stuff for cooking, then pop that chicken in to fry and cook the other stuff I am having with it. (be it some cooked grains, salad, fried veg + noodles or other) I experimented with a simple water wash the other day and just the wheat flour. It worked really well. I wasn't expecting the water to work for it. Chicken came out crispy and moist. Also put some of it on the chicken skin ( removed it) and fried, it was magical.

Almond flour+cornstarch is how I make extra crispy, gluten-free fried chicken for my boyfriend who has Celiacs. It's AMAZING. I much prefer it over traditional flour breading which gets soggy fast.

knocknockify well my wife keeps the flours separately and label BUT i picked the flour and used it without looking at it...it was after i let the chicken wings rest that i looked at the container and to my surprise it said almond flour.... well we killed them wings reaaal quick lol

My grandmother used to pan fry chicken by double dredging in flour and then potato buds (instant mashed potatoes)... Makes an amazing crackling gravy as well as some super extra crispy chicken.

Very nice! I've been gluten free for about 6 years and it's nice to have more options. As far as getting a golden brown color, I've seen people double fry their chicken wings/drummies when they're made with regular flour. I'm curious to see it it would make a difference. I use Erika's gluten free flour recipe to make my chicken wings. It comes out great. The recipe is basically 1 bag each of: white rice flour, sweet rice flour, brown rice flour, tapioca starch. Plus like 2-3 table spoons of xanthan gum. You can google it to find the recipe on her website. Anyhow, I make a batch of that and store it in a glass container and use that to cook whatever. Comes out great. People can't tell the difference between that and wheat flour, except it doesn't make me sick.
