I'm going to have to try the browned butter Rice Krispies asap. I started using browned butter in chocolate chip cookies and it's the easiest and best way to make desserts better.

I’m absolutely making those peanut butter bars for an office potluck next month! I love videos like this. It’s fun to see what little changes you can make to something to bring a dish from good to great. Even better that it doesn’t seem to take much, either-brown your butter, toast your spices, add salt to finish. So cool.

One note my friend add vanilla extract to the rice crispy treats. I usually add two teaspoons but add to your taste. Another note from Alton Brown he suggested toasting the rice crispy in the oven for a few minutes before mixing into the marshmallows and butter

I was at a rest stop in North Dakota and came across a hybrid of what you have here, peanut butter/marshmallow rice krispy bars topped with chocolate. It killed the diet I was on at the time and I became obsessed with them for a couple of months.

My wife makes unbelievable baked deserts. She is truly incredible. From scratch, she didn't grow up poor. I always ( nope, not true, I once said) say add a bit of salt. But otherwise, she is incredible. I cook, she bakes. I clean up. Works out alright.

I think it would work, it just had a different crunch than the graham crackers so it might be texturally somewhat strange. I also find that chunky peanut butter doesn't taste as sweet as creamy. It may take a few tries to balance the sweet flavor.

I think spray butter has a funny taste if it isn't cooked. Some people might not taste the difference.

An interesting note on your comment about some salt being "saltier" than diamond - that's actually not true if you use the same quantity of salt. Basically all salt added to a recipe such that it dissolves in has the same saltines (there are some perceptual differences if you're finishing with salt based on shape - flaky tastes saltier than kosher for example because it dissolves faster when it hits the tongue). Why does everyone say diamond is less salty then? Because they're measuring with volume. A tablespoon of Diamond is only 8-10g, while a tablespoon of table salt is 20g or so. Diamond isn't saltier, it's just that if you're measuring with tablespoons, you're literally using half as much salt (compared to normal table salt). The best way to eliminate this variability entirely is to just go by weight instead, assuming you have a kitchen scale that can measure down to small quantities well (preferably tenths of grams or better).

@@clapanse most baking is by weight. But often back of the package recipes are not. So I have to quickly convey salt flake size and density with shorthand concepts because we are adding it by volume.

@@SeasonLiberally Absolutely, though that leads to the unfortunate situation where if a recipe was made for table salt, and you think you'll use "higher quality" kosher salt instead without realizing you have to adjust, you'll end up under seasoning, often considerably since the kosher might only be half as much salt per volume. (Also, I hope you don't take this as a criticism, it was more just an expansion and more in depth look at why this is the way it is - I love the channel as well as your other podcasts and works, and I'm slowly trying to catch up on the back catalogue)
