Summoner is meant to be a challenging class to play, if you can't dodge attacks, then stay away from summoner. Stardust armor has 38 base defense. You can get past that puny amount of defense in pre-hardmode.

Dungeon Guardian is so easy with bannanrangs. Killing it was one of the first thing I did after entering hardmode (after surviving my first hardmode bloodmoon).

From my knowledge, to get the summon weapon from the day battle, you need to summon her at night (preferably 4:28 am) and kill her so that the battle will begin at roughly around 4:31 am.
