It might be more demonstrative if instead of inserting pre-printed pages, the device would print the booklet and maybe insert the covers. It's a much more real-world print job.

These machines run at rated speed no matter what the weight of the stock is. This is achieved by heating up the fuser to a higher temperature for heavier stocks and cooling it back down for lighter paper stock. So if you had a job with a mix of normal and heavy cover stock when it gets to the point of feeding a cover it would stop, take 20 or so seconds to heat up the fuser, feed that one piece of cover stock, cool down for another 20-30 seconds and then continue on. This process would repeat itself for every copy set, not very productive. By pre-printing the covers and putting them in the post-fuser inserter the machine doesn't have to pause for the temperature changes.

My guess is they shot it at a lower resolution in order keep the file size smaller, and easier to upload.
