The CH32V003 will take 5V and you can use the internal HSI RC oscillator, so no 3.3V or external crystal required for many applications. Good looking board!

The CVD technique i'm currently using is also ADC-dependant. I'd like to see how their library works as well, will definetly give it a look.

Yes, it does. I'll make sure to include that in my next video. As a general rule, the thicker the insulating surface is, the less sensitivity you're going to get.
