Control. That dwell time moves the coffee and drum surface temp closer to equilibrium. This creates an immediate and predictable temperature response to fuel changes.

@@MillCityRoastersMN , thanks for the reply. I don't mean to be a pain, but is the X axis not shown or truncated from that graphic? Also, Is there a key or legend to discribe the different lines shown. Again, i apologize if i am asking dumb questions.

@@ARSciandra You need to look at it on a laptop or pc. You can position the cursor at any time along the graph and it pops up BT and shows the change on the dashboard. It's 244.9F at 1 minute, but temperature is still falling and ROR is negative. Turning point was about 237F at 1:28.
