Recipe Testing for our Roast Beef French Dip Pizza
For this pizza we started with some seared, slow roasted beef and vegetables. We drained the juices to make some gravy as the base. We then topped it with provolone cheese and Italian seasoning.
We are a St. Louis style Pizza Maker bringing the STL style to Ohio. We follow the classic style of STL pizza making while adding a new twist. STL Pizza is generally associated with Cracker Thin Crust, Semi-sweet Sauce and Creamy Provel Cheese. Provel was purportedly invented for St. Louis-style pizza in the 1940s by Costa Grocery (now Roma Grocery on the Hill), in collaboration with Hoffman Dairy of Wisconsin (now part of Kraft Foods), Provel was developed to meet demand for a pizza cheese with a clean bite, melting well while breaking off nicely when cut or bitten. Since the closest Arch is over 500 miles away we blend our own Provel that lands somewhere between the classic Imo's and Cecil Whittaker's cheese blends. Our pizza is a call back to the city we love and from which we hail!
