I made this last night, except I didn't have fresh herbs on hand so I used dried thyme and rosemary. Came out amazing! Husband couldn't stop talking about how great it was, and I agree!

Why do people criticize Laura. She is lovely, and quite a delightful person, who has some fabulous recipes. I, for one love her, and her recipes are an inspiration. Just as an aside, recipes are not set in concrete, you can change ingredients to suit yourself.

I have just made this for me and the family which was a huge success! I did add my own name on it however, and drizzled hot honey over the chicken and potatoes, I also added onions and carrots. I had to sit the chicken on top of the veggies the tray just wasnt large enough as a result it did take longer than 45 mins but was worth the wait. A beautiful mid week meal, great served with crusty bread and a side salad xx

This is a great recipe and you can play around with it a lot. For example, use limes or a glass of white wine instead of the lemons. Or try different veggies -- celery, carrots, sweet potatoes, and pumpkin all work well.Also if you don't have fresh thyme, try something else, including dried mixed herbs. It's just a really good recipe.

Try an "adobo" variation of this. Adobo is a simple Philippine dish and is similar to this, but instead of lemon, vinegar is used, instead of salt, dashes of soy sauce is used, and the herb used is bayleaf. Traditional adobo is stir fried in a wok, but since it's a variation of this dish, you can try roasting/baking adobo instead. Add some peas, carrots, and/or mushrooms if you like, that's my mom's addition to the traditional adobo recipe.

Laura your so Awesome it turned out great except your fast it takes you a couple minutes to prep. It took me 10 minutes to prep. I had to cook it for an hour and 20 minutes because I was using whole legs :)

I used 2drum sticks, 2thighs, 2wings... and... 2 (1/2) breasts... bigger glass pan, more potato's, same temp 450 and went 65 minutes to make sure the breasts were cooked and yes, they were perfect! - The DS & thighs were also perfect... the meat just fell off the bone and OMG juicy... even the breasts were a delightful moist. And the garlic ? just fabulous, the GF loved it too... she thinks I really know how to cook hahhahaa, imagine THAT...! Thank you Laura..., Who loves ya

No, you just leave it uncovered, that way it gives the chicken and potatoes time to get a nice crisp on them. You could cover with foil and then turn on your broiler at the last maybe 5-10 mins of cooking but leaving it uncovered will do basically the same thing with less fuss.

Michelle Evans I did mushrooms once but their high water content made all the crispy vegetables soggy. I'd sick with root vegetables or make a little well with foil in one corner and separate the mushrooms : )

Chicken thighs will work. I wouldnt do breast because it will most likely overcook. Use legs or thighs or both. U can even use wings if u wanted

Laura - My family and I tried this recipe 2 nights ago, and it's absolutely amazing! My family loved it so much, they're already asking for it again!
