I have only one piece of advice for Grandpa- DON'T WASTE TIME AND ENERGY PEELING YOUR POTATOES- the cooked skins are delicious and contain a significant proportion of the nutrition in a potato including large proportions of many micro-nutrients including Vit C, B vitamins and nearly 90% of the Iron!
