Hello mate, been a while since I heard from you. Hope you're doing well, I cut out most carbs and sugar last year, turns out those make you fat, who'd have thunk it?

@@unclemattscookerylessons Yeah I’m good thanks. Remove the carbs and 4/5 weeks in the weight pretty much falls off, just have to be vigilant when reintroducing carbs to your meals. Keto definitely works though Ketosis is rather difficult to maintain. You’ve clearly been committed to your goals, proud of you mate.

Roasted onions done the same way are the best onions you ever had. Don't peel them, just rub off the loose outside layer cut them in half, bit of oil and salt and pepper on the top and stick 'em in the oven. The outside layer or two will be no good but inside that the onions soft and sweet and each layer just slides out, I wish I knew this years ago.

God bless you, I've just cut way back on carbs and sugar, that's it. I snack when I want, I never measure anything. It's a pain in the bum sometimes, but I feel so much better 😃

What is "cider" in the UK? Apple cider vinegar I assume.

Cider is an alcoholic drink made from apples, please don't use vinegar in this quantity it'll be far too much. You could use beer or wine, or just some chicken stock/broth

There should be another name for roast cabbage, the flavour is so unique. The Pennsylvania Dutch cut it into thick slices, oil salt and pepper, then sprinkle grated cheese on top. Totally out of this world.

A duo of cabbage, my Polish partner would love that. When I do red cabbage I slow cook it with some vinegar and sugar for that sweet and sour taste, I don't see why not. Add some sauerkraut or some coleslaw and you have a cabbage 3 ways going on, sounds good to me mate.
