It's called starting the approach to early. I doubt that this was a planned move.

I'm pretty sure that was planned, the set was a bit higher than a normal quick set, and Simon has used this tactic before

@@xcver This is something they planned and they probably used a signal right before the start of that rally. Simon has to fake a fast attack/approach to get those blockers to jump and Bruno has to set the ball higher so Simon can hit the ball when the blockers are going down. This is effective when you have a tall middle blocker because they interrupt their approach and lose height, but with that 206cm his contact is still high enough to score that.
