What should be the proportion popcorn/oil/ seasoning. Thanks

Very much a matter of taste and also the particular seasoning. That said, I start new recipes with at least 210 ml of oil and seasoning in the range of between 100 g to 135 g. Since everyone's taste preferences are different and we're all using spices and cheese powders sourced from different vendors, you just have to start in those ranges and adjust from there.

hey as u just added the liquid based seasoning on popcorn will it not turn soggy?

It's all about the quantity and the mix. Too much oil or not mixing it quickly enough would be a problem. Keep in mind that oil is much thicker than water, so mixing without over soaking isn't as difficult as you might think.

How long does it stay fresh in a bucket

Popcorn doesn't go bad, but it does lose its crunch when it is exposed to humidity... so the answer depends on how warm and humid your environment. That said, the mixer isn't intended for storage, but you could buy a lid for the bucket if you wanted.

What oil are you referring to? And how much would you use do that it’s not greasy

A good question! it's important to keep in mind that you're going to have to experiment as the type of oil (different vendors use everything from coconut or peanut to vegetable or even olive oil) and corn (mushroom or butterfly and how tender and what size) will make a big difference. The seasonings you're using and the temperature and humidity you're working in will also have an effect. It's also worth noting that I use air popped corn, so there's no oil in the corn before add the seasoning and this will be quite a bit different than if you're using a traditional oil popping kettle to start with. Like you, I prefer that my finished product not taste or feel greasy. I use only white coconut oil, and generally in the area of 200 grams per 5 gallons of popcorn. That may be a good place to start testing, but for all of the reasons above that may not ultimately be the right choice for you.
