Which load cell amplifier are you using?

would this same setup work with a 10kg load cell instead of 5kg?

Yeah of course. Any load cell would work. You just want the minimum size load cell for more accuracy

Dude strain gauge is attached directly to the motor mount eh ?

No. The strain gauge is attached to a flat mount and the motor mount is attached to the flat mount. This allows for easier calibration before testing.

I built this as well and noticed the values are off compared to the Estes website. For instance, for a B6-4 I was obtaining a max thrust of 8N, where theirs is 12N. Any idea why this is?

Hmm perhaps you amplifier is slower? Don't quite know without the specific details.
