Another BRILLIANT instructional video Roger and like you I too enjoy eating salmon and particularly enjoy the salmon patties my wife makes. I honestly believe the people who don’t like salmon mistreat their catch. My dear old Dad taught my brother and I to “respect” your catch and this will dramatically improve the quality of the catch. Years ago caught some salmon ,fried them but never liked it at all , a year later a trip to Lake Macquarie and caught more salmon , a young fellow wanted the salmon I caught I gladly gave them to him , curiosity got me and I asked how he cooked them , he wold me cook them in milk in the fry pan , I did and wow made a huge difference ,give it a go and see if that is something you like. 👍

HI Roger, Re 'bleeding', I was shown a way last year that is superior to any other method with Kahawai that i have used before. Take a bucket or tub to the beach and fill it with water. When a fish is caught, nick through the vein in a couple of gill rakers and put the fish in the tub of water. It will swim and thrash in nervous response to the water and bleed out really well. i have always found that with Australian Salmon removing the bloodline isn't the important part its more looking after the fish once you have caught it, bleed/brainspike the fish and put it on ice right away. Salmon is also very very good sashimi and is really good for ceviche aswell

great instruction and education on getting great meals without even going down the curry and fish cake routes. those offer great options of course asian style. always consider lemon or lime juice as an additive to just basic salt and pepper with ailoi of course and your tacos versions.

Interesting vlog, Roger. It's a known truth that most fish mongers prefer a stiff 6 " boning knife to fillet and process fish. It's the tackle shops who promote and try to sell those long flexible fillet knives.

Thought I was the only one on the planet that prefers the bigger knives for filleting! Was down your way at Wairo beach a few weeks ago and got a nice feed of fish including some salmon. Prepared them exactly as you do. First night they were fish and chips. Second night, yellow fish curry. Third night, Thai fish cakes. In a blind taste test my wife actually preferred them to the flathead for fish n chips. I'll still go with the flatties but salmon prepared properly are delicious and very versatile. Abundant too.

I might try filleting a salmon one day If one turns up as a by-catch. I used to catch them a lot when I used to go to Apollo Bay. And I found them to be barely edible cooked whole, they had an iodine kind of flavor or something, even though I bled them.

love ya work if i may, a tip I've i found on rigging worms , break a few inches off from the head thread up from the gut end first and pull the head up over the eye of the hook ,it stays on longer then fill the hook up as normally great for jew as makes the bait look bigger and lasts longer sorry about spelling and punctuation

I fish for them in New Zealand on the fly, using small anchovy imitations. They go great guns on a lightweight rod. Best fish for a taco, by miles!

@@grimreaper6112Aus Salmon don't have a strong taste, they're one of the most mild pelagics, the "strong/fishy" taste you're getting is Histamine because your salmon are spoilt because you didn't treat them right or process them correctly.
