Here in NJ, there is an abundance of tailor [bluefish]. I've never heard of anyone speak so kindly to blues. I'll defo keep this in mind.

Nice one Rod. Smoked tailor is an all time favourite of mine too. I do it a touch different- gut and gill on the beach, DO NOT scale it, and right there on the beach put it in a clean bag with salt and sugar (that you have brought for this purpose, don't need much, doesn't take much room and other fish can be done this way too) and wrap it up tight. 2-3 hours later at home, it is cured and seasoned through, you drain off the syrupy juice that has formed, and it is ready to smoke. If anything I aim for a little cooler and a little longer than you cooked that one, but it is a hot smoke. Leaving the scales on is the trick, it makes an awesome thick crust that is usually entirely edible- kind of like salmon skin when you fry it. Smoke flavour still gets through but the flesh stays super moist under the stronger skin shield...

Yeah, it is nice because it is easy and quick and you don't have to make a mess scaling (especially at home), can do all your messy prep at the beach, but it actually works really well too. Worst case is you peel the skin and discard, but when it works out crispy it is amazing.

Down to personal taste, you can just use salt if you want, as you could just use sugar. I like mine saltier so do about 1/4 to 1/3 sugar and the rest salt.

Gotta love the old portable smokers- Just did a bunch of Sprats on mine a little while back, salt, brown sugar and a bit of soy sauce and garlic, turned out absolutely beaut. Super easy way of cooking fish as well. Keep up the awesome work and tight lines!

Couldn’t agree more how under rated this meal is! If you have already you should try snapper. Take two fillet off the snapper, eat that how ever you want. Then smoke the frame, the wings and the head..... I assure you you’ll start digging in bins for snapper frames 😂😂

Awesome vid, good to experiment with the different wood chips for different Smokey flavours. Even throwing eucalyptus bark into the mix or cinnamon quills. Actually the brown sugar and cinnamon would go really well together.

In new Zealand we butterfly our fish for smoking and than put the brown sugar in the inside of the fish skin side down. Also the fish roe we smoke and the fish heads we de gilled than place in smoker.

Interstimg might have to try smoking whole fish myself. You should try butterflying the fish next time and rubbing the sugar and salt into the flesh then cover in a dish for 30 mins in the fridge then rub a bit more salt and sugar in then put in the smoker! That's how I do my kahawai and kingfish here in NZ! Love the vids rod
