I may be missing something but I wondered why it is considered necessary to paint the wood in places. I think I would prefer to leave it in the natural pattern but as I am never likely to be able to acquire a Rolls Royce I suppose it is none of my business

I guess they're so picky about the panels matching exactly that they'll touch it up with more stain because one side is too light.

Wood veneers will have natural defects and small areas that will need to be filled and touched in with paint to disguise. You can see the lady at the start of the video applying filler to areas of the dash that would have split/cracked when being formed around a curve. Applying filler, sanding and then painting on to match the surrounding wood will make for a seamless finish. I know because I do this :)

Yes, shims applied so the mother of pearl inlay sits flush with the surface. I guess different colors for different thicknesses depending on how much clear coat has built up in this area.

the moment this video starts a lady from the veneery section takes a small portion of brown paste and applies it some scuffed portion of the veneer- i think its to camofledge those imperfections- would any one here let me know what that paste is known as ?

It's not painted wood, they are touching up defects in the veneer.
