50 cloves of garlic is not excessive in my mind for soup. I absolutely love and adore garlic and I don't think I trust people who don't like garlic! :-)

I have made this soup many times. Yesterday I took the day off from work and planted 60 cloves of porcelain garlic. I started growing garlic after I had this soup at the Stinking Rose restaurant in San Francisco many years ago. This soup is truly a gift to mankind.

FINALLY!!! An actual 'garlic soup' recipe. Sick and tired of all the what I call 'potato soup' recipes 'with garlic'. If the main bulk of the ingredients is potato or any other vegetables, then it's not garlic soup, it's just 'whatever soup' that has garlic in it (in my opinion).

Sounds great. I would use substitutes for the cream and butter. Silk brand Organic Soymilk has a creamy quality and Walmart now carries a new product called Melt that is a really delicious coconut based organic butter substitute. Sometimes too much garlic interferes with my sleep cycle, so organic garlic is a must.

If you have a cold or are vegan skip the dairy, use the oil from the roasted garlic to saute the vegetables, add chili, skip the cream or use an alternative non dairy milk but it's delicious without. Thanks for recipe.

Do you think you could add chicken to this without effecting the flavor? How much would you suggest?

Katy V. I don't think this needs chicken but if you liked you could make your own stock? I'd do this by first boiling a whole chicken in a little salted water. Then pull the cooked meat from the bones and discard the skin and bones. Then make the garlic soup above using the water you cooked the chicken in instead of the chicken stock. If you would like chunks of chicken in the soup then add it after you blitz it. If you'd prefer a smother soup than add the chicken before blitzing. That's how I would do it anyway. That will give a lovely chicken flavour and chicken and garlic go really well together. 👍🏻
