So, on the topic of phase. You mention the phase relationship changing "daily". Many variables are at play here. A key thing to note is that EVERYTHING affects everything, especially your brains perception of the frequency spectrum in different contexts. For example, you could use the exact same drum mic setup and play the exact same way on two different songs, but since the surrounding music (context) is different, you will hear the drums differently. Every time. First thing to rule out: your mind is playing tricks on you and you're hearing something that isn't there. Happens to the best of 'em. Second possibility: if you remove or add a single microphone from the setup, the phase relationship between a majority of the existing mics will change. Easy to forget. Third: If you increase or decrease your physical velocity behind the kit, there is a noticeable change in phase relationships. For example, if you slam the crap outta the center of the snare, you will "beef up" the sound of the close mics and trick yourself into thinking the snare is more in-phase because the extra air gives the impression of better low end. Fourth, and this one is less obvious until you go a little crazy with troubleshooting. Moving ANYthing in the room can affect the reflections, and reflections affect phase relationships even with just a few microphones. Had your jacket hung up next to the door yesterday? PUT IT BACK! Were there empty drum cases strewn across the floor? METHODICALLY PUT THEM BACK! Everything affects everything. Stay sane!

the most important factor for good drum room sound is the height of the room. Above 2m40 is a minimum

What do you mean the polarity maximier "isn't always right"? But since I don't use any plugins it doesn't matter. I only use outboard analog gear. What monitors are you using? KZbin, Joe Logsdon & Company.
