Don't you just love making things out of flowers? The ephemeral loveliness of a flower can never truly be captured, but sometimes you can find little ways to preserve the best bits of summer. My rose petal jam is just that, and it's just what you'd expect eating flowers to be: sweet, delicate, tart, lightly floral and simply wonderful. I've worked on the recipe, which uses pesticide free wild (or cultivated) rose petals, for the last three summer (as wild roses are very abundant in Prince Edward Island) and I've got a near perfect recipe and process, and in today's video I'm sharing all of it with you! RECIPE:
Rose Petal Jam Recipe
2- 4 cups rose petals (fragrant red and pink roses work best)
2 cups sugar
1/2 cup lemon juice
4 cups sugar
6 cups water
(optional)
1/4 cup sugar
2 Tbsp powdered pectin
Gently wash the rose petals, watching for bugs, worms, sticks and leaves. Remove petals from the water and gently squeeze or pat to dry.
Place petals in a bowl with 2 cups of sugar and the lemon juice. With one hand, begin to massage the sugar and juice into the petals. You will see the petals start to wilt. They will release their perfume and colour and after a few minutes you should have a pink syrupy paste.
Next, combine water and 4 cups sugar in a pot. Place over med/high heat and stir until sugar dissolves. Bring to a boil and then add the rose petal mixture. Stir roses into the boiling water.
Optional Step: Combine 1/4 cup sugar and a spoonful of powdered fruit pectin in a small bowl. Whisk together or stir with a fork. Add the sugar and pectin to the roses by sprinkling it in slowly, while stirring constantly. (You want to avoid having clumps form).
Let the roses simmer over medium/high heat for about 30-40 minutes. The petals should start to sink and the mixture will thicken just slightly. If using a candy thermometer, cook jam until it reaches 110 C. At that point, remove from heat and pour into sterilized jars. To can, place in a boiling water-bath canner and process for 10 minutes.
Once processed, remove jams from canner. Let cool at room temperature. Check each jar to ensure that a seal has formed. Store at room temperature until jam is opened. Properly canned jams will last one full year in dry storage. Refrigerate once opened.
If you're not canning, let the jam cool, then cover and keep refrigerated. Jam should last 3-4 months in the fridge.

PopinStyle , it’s called damascan rose. The one which is used for rose oil, perfum oil, it bloomes in May and part of June, at least in Europe.

In India , We are using ... Pink Rose petals + honey + cardamom + some spice + put on this all ingredients in one jar with heavy sunlight of summer ... Delicious jam is ready after 21 days... Only natural ingredients .. We are using this jam in our sweets, Indian bread ,roti,paratha etc... 😋

burak ayan 'gul-aab' or simply 'gulab' means rose where the word gul means flower.

These are wild roses and while they look pretty they don't have much aroma or flavour. For a nice strong rose flavour for a jam or preserve you need centifolia or damask roses. Also what you made is like a jello. Rose petals have a very nice crisp texture so it feels like a waste to throw away the best part. I highly recommend you find some fragrant roses and try making a preserve.

Exactly...only damask/damascan roses which bloom in May and part of June (in Europe) can be used for this purpose and syrup.

the easiest way to use rose petals is to infuse them into a cheap vodka or white rum overnight then seive and funnel back into the bottle, goes great with a traditional cloudy lemonade. I have also made turkish delight and a wild flower syrup. I will definitely try this recipe, thanks.

Arona Lor Store bought roses are typically filled with pesticides and not meant to be eaten. I believe you can use any kind of roses so long as they're organic.

Hi, do you save the water from the cleaning the petals, to do a warm bath? Good for skin! Petals are for healthy face and body skin that is soft as petals. The button of a rose 🌹 are also full of OIL’s that are use for skin specific for face and to remove old age spots.

Stephanie Singleton Any rose petals that are pesticide free. You could try ordering food grade roses from a florist or get petals from a friend's garden. 😃

It tastes floral and nectar like. I taste a sort of elderflower. It is only too runny if you decide so, I find it's too sweet to have big clumps of, so my recipe is very much like a honey. It is firm when cold and syrupy when warm. If you want firmer jam just cook it down longer/ to a higher temp 😃

Well roses can be very bitter once cooked/mashed so they definitely need loads of sugar to balance that out (if anyone else is going to try reduce the sugar, add a tiny bit of salt, and I mean tiny at a time. Salt is also very effective at balancing/hiding out bitterness) , The sugar also is a preservative to help it keep longer/better. But it might work well with less sugar

Sorry this is not rose jam,this is rose jelly.if this were to be jam you would have to boil the water sugar and roses until it gets a thick consistency and you do not throw out the petals ,they’re the best part.
