Thank you so much. I am planning to can 7 quarts of chili over the next couple weeks for our pantry. I love your videos because you teach me how to do it correctly. I can't wait to try to can this recipe. I am only using the ground beef this time. Then I will can using the cut up beef just to give it a try later on. I buy the meat when it is on sale and freeze it till I have enough to can 7 quarts. I only have a small freezer, so, canning gives me another way to store the food. My goal is to have a variety of meats and meals canned for easy access and then rotate them out as I use them and replenish when I have 7 empty jars. That way we will always have stored food for easy access when we don't feel like cooking and also in case of an emergency. I am excited to have someone teach me how to do this safely!!

Thank you so much for your videos, Pam! I'm new to canning so your videos have been extremely helpful. Today I canned chili using your recipe, except I doubled the recipe. It made 7 quarts plus plenty extra for a couple meals. We just had this for supper tonight and it was excellent! Since I like my chili more soupy I added a can of tomato sauce along with the beans. We topped it with cheese, corn chips, and cilantro. Yum!!! So happy to be able to add this to all my new home canned goods! 😊🌹

Great recipe & I agree with no beans at this stage. I neither pressure can nor freeze chili with beans as we do not care for the resulting texture of those beans, a bit mushy for us. However, simply pressure canned beans are wonderful, we find, so, I don’t know why, but there’s a difference! Thank you again!

If you find that the gasket of a Weck jar is sticking out, you can close it by pushing it in. Crucially important is to do this immediately after taking the jar out of the canner, whilst the jar is is still hot/warm (and the clips are still in place). The seal will be OK. As an extra precaution, I then mark the jar with a marker and put it on the shelf for use before the others. (Never has any trouble with them, though.) In all the years of water bath canning with Weck jars, this has occurred only very, very rarely indeed (when I re-used the gasket one time too many!) I suppose the greater pressure exerted by pressure canning versus water bath canning has something to do with this phenomenon.

My goodness!! When you said about cooking the chili then canning it was double work...of course it is. I will try this method next time. Still a bit leery on the Wecks, canning 5 compared to 7, with 2 that may not seal. Just don't know, but Appreciate you showing your recipe, sounds delish!!

The two that did not seal were entirely my fault. We were in a time crunch so I did not allow the canner to cool down completely by itself--I helped it along and the contents of the jars super-boiled as a result and forced the gaskets to push out from the lids. If I had followed my own guidelines, I would not have done that and they would have sealed! Although I love Weck jars, I still do most of my canning in Ball jars. But now that there are just two of us instead of eight, I can afford to indulge myself in using Weck jars once in awhile! Thanks for your comments, and for watching!

I just now started 7 quarts of your chili mix recipe. per the comment below...I went ahead used diced garlic spice (as shown in your video with the other spices). Also, for the 7th jar, I didn't have enough ground beef OR beef cubes left for a jar each so I used both kinds in a jar. I hope this works out! So excited to see how this turns out! Further to my previous comment on Weck gasket sticking out: pushing it in immediately after taking the still hot jar out of the canner (with the clips still in place), is only successful if the gasket is not sticking out completely (when there is still some contact between the gasket and the rim of the jar).

You are welcome. The flavor of canned meat is not the same as when you cook it fresh, but it is really quite good. We generally add our canned meat to recipes like tacos, or soups, salads, or casseroles rather than all by itself, and it works well that way. The texture is just fine and the flavor is good. Mrs Pam has her recipe listed in the description. She mentioned five spices but there are six bottles on the counter. I believe the one not mentioned during the video is the bottle on the end, dried minced garlic. She has thyme, oregano, ground coriander, paprika, ground cumin, and dried minced garlic.

Dear Pam, you are a wonderful teacher. Both my husband and I love watching your videos! I have a question about the thickness of the content in the jar. You mentioned in one of your videos that the solids and liquid should be 1:1 ratio, otherwise the content would be too thick in the jar and the heat won't penetrate to the center of the jar during canning. Chili tends to be on the thicker side for canning, but yours turned out beautifully! How can I determine when I pack my jar too tight that the heat won't penetrate the center of the jar during canning? Thank you!

This is a great question. When I am doing soups or stews, I try to make the contents about half solids and half liquids, which means sometimes I have to thicken them after opening the processed jars. Chili is a little thicker, but it is not as thick as I would make it if I were not going to process it. If there is plenty of movement or looseness of the contents when you tilt the jar back and forth, you are probably OK.

Hi Pam, I have so enjoyed watching your videos on food preservation. I am sorry to ask and apologize if these two questions have been asked previously and I missed your response. First off, I thought you had to pack ground beef warm and have warm liquid as well. The second question is what was the temperature of the water in your canner when you loaded the jars. I presume it was either cool or barely warm but just wanted to make. I am excited to try this recipe in the next week. I am sorry to be asking this in this video but I have looked and cannot find it anywhere. I would like to know about your outside canning stove. My house is very small, under 900 sq. ft. When I do any canning my whole house heats up a lot. I have to wear a sweat band and keep a damp towel around my neck. I really need to set up on my porch. I had a question about the international jars that go on the metric system for volume. Would the Liter and 1/2 Liter jars be processed at the same times as the Quart and Pint jars? I was wondering because we are finding more metric system jars where we live and that they're only a little bit different in volume. I was wondering what your opinion was on that. Thank you.

Yes, process them as per pint/quart.

This is probably a strange question but will ask. I purchased a large container of Hatch green chili and thought I could add it to cans of petite tomatoes to use as the Rotel? If so would it be equal amounts? I want to make sure it is a safe mixture

There is noting unsafe about mixing those two together. However, if you are planning on canning that mixture, you will need to pressure can it using the USDA guidelines for pressure canning tomatoes. The green chilies are low acid and must be pressure canned.

Hi new to canning. Glad I found your channel so much good information and safety. So I’m assuming that you can just make a big batch of chili with beans and everything and then pressure can that?
