Roti is literally the North-Indian (Urindi) word for "Bread" -- it is any type of Indian bread made from unbleached flour (plain flour not treated with any chemicals or bleaching agents). Examples of roti include chapaati (also called saada roti or phulkaa in Punjabi), paraatha, and naan (oven-baked chapaati). On the other hand, flour that is used to make cookies (or biscuits in British) and pancakes et cetera is "bleached flour" -- this means that the flour has been pretreated with peroxide- or chlorine-based bleaching agents. Why on earth would anyone want to bleach the flour? Bleaching enables flour to become more easily molded into various shapes, allows doughs to rise, and improves the overall food texture. Bleaching also prolongs the shelf life of the flour. But, bleached flour is EXTREMELY unhealthy. What about unbleached flour used to make roti? Is that also healthy? Unbleached flour is better than bleached flour but far from healthy! In the roti flour, the outer layer (called bran) is removed and discarded. In my village, we used to grind the fresh whole wheat grain (harvested from our own fields weeks or months earlier) using a manually-operated stone grinder called "chakki". However, before making rotis, the whole flour was passed through a fine sieve (called chheeni) to remove such bran (called Chhela)! I cannot believe how ignorant or "jahil, ganwaar and unpad" we were in that we would throw away the most precious component of wheat grain. Notably, the bran is loaded and super-charged with fiber and other antioxidants essential to our health. Additionally, the bran prolongs the digestion of roti in the stomach so that we feel "full" for a long time (I sometimes go whole day without having the urge to eat anything thanks to my whole grain roti!). Most importantly, the bran also serves as a prebiotic -- it supports the growth of our defensive soldiers (bacteria such as lactobacillus and bifidobacterium strains) inhabiting our gut, implying that they keep out pathogens (or bad bacteria that can cause disease and allergies). In a nutshell, the widely available roti flour is absolute garbage and just as bad as "American Food". If you want to lead a healthy life, use whole grain roti flour (flour made by grinding the whole grain without removing the bran or anything else). But, be aware that the "whole grain flour" has different meanings in countries other than USA. In the UK and Canada, for example, whole grain flour is anything but whole -- in those countries, they remove a part of the bran for reasons that seem ridiculous and ludicrous. I should also add that the traditional roti flour is usually made from wheat though corn (makke ni roti) and millet (baajra roti) are also sometimes used. In my village, we used to have wheat roti as a staple during the summers and baajra roti during the winters. Bachpan chalaa gaya jawaani chali geyi, jindagi di keemti nashaani chali geyi!

I agree with 100%, bleached flour is very bad for us. And just like most cooking oils are heated up so high that it causes the oil to over heat and can cause cancers in our bodies. Thank you for your information.

Usually, dough is ready even as soon as you prepare but sometimes, flours are different and may be sticky initially but after 10-15min, it becomes better and chakki atta may give different texture.

I love the way it puffs up :) Tomorrow perhaps I try. I made buss up shut roti paratha ...come out beautifully. I am a bit puzzled how to store it at least to the end of day so it stays fresh and fluffy? Usually, flour takes different amount of water but I take about 1/4 water for 1 cup of flour but you can add as needed to make soft dough. You can use mash rack on electric stove. To keep rotis soft, as you make, stack them on top of each other and use air tight container.

Calvin Krause never follow asian and middle eastern recipes regarding water to flour ratio, they are all wrong because our western flour has more humidity . Normally the correction ratio is adding a whopping 50% more flour, but the correct way is to add flour gradually until you "feel" it’s right.

You can wrap rotis in either foil or paper towel and then place the wrapped rotis in ziploc bag and store in the refrigerator. Rotis stays great in fridge or freezer. Just reheat when you are ready to serve them.

I started my chapati in a cast iron pan on medium then put them over a cooling rack over my electric coil stove set to high. I finally got my chapati to puff! Thanks!

Chapati flour is different than AP flour. If you use AP flour, rotis will come out chewy. You can buy chapati flour from Indian grocers or use whole wheat flour.

I decided that today tonight when I start I won't leave the kitchen until I get it right. I had a friend when I was younger who came from India and his family would invite me in for roti that's when I fell in love with it. Hi Bhavna, I've watched a great deal of your videos:Thank you.Great job! And though I had watched quite a number of times the chapati video, there's one thing that still puzzlles me. The quantity (volume) of that one cup of flour looks huge :) How many grams are in it? And since I've failed to make a perfectly puffed roti,I guess it depends on the time you cook/flip it, right?Thks. btw I've got a chakla belan just like the ones you use :))

Not kidding, just showing possibilities but it's really everyone's preference. Oil and salt is optional but oil helps to keep rotis soft and just pinch of salt adds flavor for tastebuds.

Thank you so much for this tutorial. I've tried and tried again to make chapatis but never got them right till I watched this video. I noticed the dough was quite wet when being mixed as it was squelching between her fingers then when the flour continued to absorb the water it became perfect and soft. Now I follow this and my chapatis are perfect.. Not bad for an English boy. Many English people are used to making pastry which is not as soft as chapati dough should be; I think this is where we go wrong. Thanks again for this articulate and informative video.

ivh1968 Yes, you got it right. It feels sticky in the beginning and later it becomes smooth.

Hi Bhavna, Thank you for all your recipes. I enjoy watching your videos and try things out. I love curry and Indian bread. Since I often cook chapati and naan, I bought today a crepe pan to cook chapati. Would the thing you use or tawa? be better in any way for any particular reason? What is it that you use under the pan? What is the name of it? Can I buy it at an Indian grocery shop? What do I as for if I want to buy one?
