another aspect where Vram is crucial and that is 3D rendering. If you render small stuffs, then 8gb will be decent. but when you will work with high res textures, large scale rendering like environment rendering, or even rendering 5-10 sec 3D animation, you are gonna out of Vram for sure. In that case, 12 GB will be the better option I guess. Another big and potential competitor is Arc 770, Hoping that intel is gonna optimise it within next 1/2 years for creative programs. then this can be a much more easy pic due to its 16GB Vram for creatives who do 3D rendering and animation stuffs

The OG Rtx 3060 version was 12 GB which was launched at January 12, 2021 and the 8 GB version was launched at October 12th, 2022. Also the 8gb version isn't just less vram. It's actually a cut down version of the 12gb. It has 3584 shading units compared to the fully unlocked 3840 shades on the 12gb and also only has a 128 memory bus width vs 192 bit on the 12gb. I would suggest you guys to do more research before making content.
