I made this ice cream out of mangoes which were not very sweet and it turned out fantastic. I had to add extra condensed milk to give it a sweet taste. As Chef Ruby said the curd should be fresh and if it's drained well the slight sourness will also disappear. To drain the curd put it into a stainer and keep it over a bowl. The water that drains out, should be drunk as it's delicious and good for health. Please follow the Chef's receipe as shown and you can never go wrong.

Cut 4 mango in pieces put in zipper bag and freeze for 2 hours plus a metal steel mould .. Seive 1 cup sweet thick yougurt Blend the solid part of yougrt with Frozen mango Immediately put in mould without losing it consistency in freezer for 2.5 hours

Hi ma'am I tried mango ice cream yesterday, with exactly the same process you taught us all, instead I kept the foamy batter for the entire night or I guess more than that, but there were crystals formed in the ice cream in every bite, the taste is exactly as 🍨 though delicious but then please let me help out with this this that why were there crystals in it? b4 freezing it just put a foil or plastic over the surface of icecream ...foil or plastic must completely touch the icecream then put the lid on container in this way crystal will form on the surface of plastic or foil..

You had to give it more time for blending or the blender was weak to blend it well. Or maybe it was due to that condensed milk
