Glad to have found this episode. I am looking to start a craft cocktail catering service in my city and it’s awesome to hear it discusses.

How do you wash glassware on site? I can’t wrap my mind around bringing enough without having to wash and polish. If you’re at a backyard event what do you do?

With most glassware rental companies, you simply use it and then re-rack it for them to pick up after the event. For smaller events, compostable cups are often the best route.

Does she use real glasses? I do events at a convention center and I'm fairly limited to what I can make because we use plastic cups, so everything basically has to be on the rocks D: you mentioned negronis and old fashioned, you've gotta have glass right?!
