I think Joong Ki was already in love with Jihyo, leaving RM just made him move on easily. If you observe all Joongki's episodes, he really likes Jihyo, he always sit or stand beside Jihyo. But the other members prefer to ship her with Gary because it's funnier whereas Joongki and Jihyo is a visual and romantic couple compared to Monday couple. They always had this strong chemistry but again because of Gary they didn't get attention and Joongki always hold back his affections towards Jihyo. Not being delusional just my observations.
