Russian Walnut Shaped Cookies | Oreshki Recipe

There are many traditional Slavic cookies around the world, but there is no better cookie than Oreshki. They are shaped into mini walnuts and they taste so good. Oreshki are very well known as beautiful, walnut shaped Russian cookies. They are so popular in Latvia and many other Slavic countries. They are very iconic Russian treats, especially we eat them during many holidays like Christmas, Ligo, Easter and other special occasions. I love these cookies so much, I used to eat Oreshki every holiday! Cookies are very golden, crispy and come out so well with this recipe. The filling is so creamy and caramely. It really is a favorite among everyone, but especially children, it is my childhood treat of all time. Oreshki are made of two components that are absolutely awesome together - short crust cookies and caramel. I can remember watching my grandmother making them and couldn’t wait to eat them all.

Waoh we do have the same ones in Tanzania, East Africa. They are called "jicho la ngamia" translated to "Eyes of the camels". Fascinating how food can bring people of different ilk together.

I think you should try a mix of both. The almond flour will give you the softness and the rice flour the crunchiness. However, the shells should be soft so I would not add too much rice flour. Maybe a ratio of 3 to 1 would work great ...

This is called Walnut Maker or Oreshnitsa. I finally found one with US plug by Top Home Plus. This is the link, if anyone's interested. its pretty tricky to do this recipe without one, sadly its an old traditional recipe and they always used moulds which took even longer than a waffle maker!

not possible in cups, baking needs to be measured in grams :) you can get digital scales for like 5 $ and its so much more accurate :)
