I've been playing with buckwheat lately, this turned out way too hard so today I'm eating 50% buckwheat, 50% red lentil bread. I also did 100% buckwheat bread before. A bit dense, but still pretty nice. Buckwheat is so versatile!

Hi Ryoya, thank you for this beautiful video! I really love the craft of all types of noodle making, and I have enjoyed all of your soba and udon making videos in the past. Actually, I remember being a university student when I started watching those videos (6-7 years ago?), and now I have this new video to relax to as I just got word today about the first job offer that I have been truly excited about in my life! I've been binge watching " summer nude " -by the end of the summer lol - and almost every episode the female lead cooked yakisoba! I craved it so much because everyone in the series loved it and asked her to cook it every time! So, would you mind cooking it in the near future? I just finished the series yesterday, and because they're always eating, i grew a habit that i must be eating while watching it because they make me crave the yakisoba so much 😂😂❤

I have a friend from nagano. I asked him to bring me soba with 100% of buckwheat. I didn’t know it was hard to get in Japan also! I wanna make homemade soba since a while! If I found a great quality buckwheat flour I will make it !

Hmm, i wonder what grade of buckwheat flour you used. Judging by the color of the noodles, i think it's Ichibanko. If so then that really puts into persepective as to how difficult it is to turn into smooth noodles, especially when you made it with no binding agent.
