there is a Taiwanese style vegan buffet restaurant in Tainan, my home town. Nowadays, newly opened restaurant often often goes with more exotic styles to get more attention, so it's hard to see truly Taiwanese vegan dishes in these fancy restaurant.

On the other hand, the local, traditional, classic restaurants are not foreigners friendly, (lacking of English website or services), but I'm sure they're very happy to serve people from everywhere, we Taiwanese are all kind and hospitable.

I want to go solo trip like you did. It seems so fun.
I never thought of visiting Taipei 101 although I go to Taipei once or twice a year. I went to school in Taipei and worked for 2 years. But I eventually had to come back home in Kaohsiung then I was able to breathe freely. But it's nice to view the beautiful night scene up above from top of Taipei 101 through your camera.

Most of the Taiwanese vegan-friendly restaurants/food carts are around the temple, for example, XingTian temple in Taipei, ChungTai Monastery in PuLi, Nantou, Chengtian Monastery inTucheng , New Taipei City etc. Some of the restaurants have janky exterior and janky exterior but the food is just so good!! You can also find some night market. (NingXia night market for example) However, usually they don't offer English menu, you probably need a person who understands Chinese to go with you. You should have gone to Fo Guang Shan hq north of Kaohsiung. Lots of v food there.
Did you use GoPro a lot? The resolution wasn’t great and the hue seems to be dark and yellowish most of the time for the trip

It really depends on what kind of food you want to eat. Personally I liked the local vegan restaurant in Chia Yi called "蘭心園素食坊"

I would think that street food or mom & pop joints would be the best sources of authentic Taiwanese cuisine, but they probably don't have the vegan offerings you're looking for. Maybe a lot of vegetarian, but not vegan.
