INGREDIENTS--------------------------------------------------------------------------------------------
To Make Karanji Cover-----------------------------------------------------------------------------
1 cup Semolina aka Suji
2 tsp Ghee
1/4 cup Milk
1/4 cup Water
Oil for Deep frying
To Make Sata------------------------------------------------------------------------------------------
2 tsp Ghee
2 tbsp Corn flour
To Make Bakar-----------------------------------------------------------------------------------------
1 cup Dry Grated Coconut
1/2 cup Powder Sugar
1/4 cup Semolina
1 tsp Poppy seeds
1/2 tsp Cardamom Powder
1/4 tsp Nutmeg Powder
1/4 cup Mixed Dry Fruits chopped Almond, Resins, Cashew
INSTRUCTIONS-------------------------------------------------------------------------------------------
To make Bakar (Stuffing) ----------------------------------------------------------------------------
In a pan, Roast grated coconut and transfer to bowl, then roast rawa and transfer to bowl. Roast mixed chopped dry fruits and transfer to bowl, also roast poppy seeds and transfer to bowl.
Let it cool down for 20 mins.
In a medium bowl, add roasted grated coconut, powder sugar, roasted rawa, roasted poppy seeds, cardamom powder, nutmeg powder, roasted mixed chopped dry fruits and give a mix.
You can make this bakar a day earlier, store and use it later
To make Karanji cover
mix 2 tsp Ghee to rawa to crumbly texture.
Add half milk and half water mixture in little quantity to rawa and knead to medium firm dough.
Cover with lid and let it rest for at least 30 mins.
To make Sata-----------------------------------------------------------------------------------------------
In a plate, add 2 tsp Ghee and smoothen it using fingers.
Add 4 tbsp Corn flour to Ghee in little quantity and give a mix.
Collect sata in a bowl.
To Assemble Karanji
After dough resting for 30 mins, Soften the dough in mixer or in food processor by adding milk and water mixture in little quantity.
Make 5 small dough balls and flatten them into thin flat bread.
Divide sata in 5 equal parts. Take one Flat bread on flat surface and prepare flat bread by spreading one part of sata on flat bread and dusting some corn flour on it. Then put other one flat bread on prepared flat bread and Spread one part of sata on flat bread and sprinkle some corn flour on it. Repeat this process for all five Flat breads.
Make this into tight roll, pull a little and make it little longer.
Remove 1 inch part and cut into 1 inch pieces. Store them in bowl with lid on.
Place one piece on flat surface, flatten without flipping it.
Prepare tambya by wrapping and tieing cloth around tambya. In hand or on prepared tambya, Fill 1 and 1/2 tsp of bakar, put some milk on the edges with finger. Fold into half and Seal the the Karanji by pressing these Karanji edges together.
Make a design using fork as shown in video. Karanji is ready to deep fry.
In a pan, heat oil on medium flame. Deep fry Karanji from both sides for 5 mins. While frying, put some oil on karanji using spoon, it will help to seperate karanji covers layers.
Flaky, Crispy Karanjis are ready.
