Dear ginger is the main ingredient in sambar. U can also add sambar onion while boiling the vegetables as its enhance the taste of sambar

This recipe is created for the north Indian palate. I'm not hating on it, I'm south Indian myself and make authentic sambhar regularly but I also like the north Indian take on it which is why I am watching this so I can do the north Indian style sambhar today. But I would appreciate it made clear that this is not how it's technically made.😊💖
