My father was born and raised in Paombong, he passed away 20 years ago. I'm 33 now and based overseas.. and this docu reminded me of his legacy, his hometown, my grandparents, the times growing up greeted by the hospitality of my elder cousins whenever we visit the town. We had tapayans in my lola's house, and I agree the smell is distinct even after so many years the smell of tuba and sukang paombong is very unique. There was a time my parents tried to market it but gave up, we the children, didn't capitalised on our sasaan due to the tedious process. Floodings during the typhoon season is our number 1 challenge plus the lack of technical knowledge back then, I remember the suka turns dark with floating black bits of scums and cloudiness hence it was hard to market outside the town, it had a look of murkiness on it. The farm remained in our family hoping someone down the line will utilize it. The times have changed, and for sure the process could remain artisan while making it mechanical. All the best to the town and town folks. My core memory includes opening those tapayan jars to fetch a glass of homemade vinegar then pour it on blanched oysters. Ingat po at mabuhay!

Ako, sukang tuba, either sasa o nyog talaga ginagamit ko sa pagluluto o sawsawan. Nagpapabili ako sa Paombong ng sukangbsasa. Hine province ko kasi ay Bulakan kaya nakalakihan ko na tuba ang ginagamit na suka.
