Why would saddlemakers make the gullets so that they get thinner as they get deeper back in the saddle if they knew that horses should have a gullet that is around 4 fingers wide?

4 fingers is a general guide. However, every horse is slightly different. You will need to palpate the area in question as is demonstrates in the video to determine the requiements of your horse.
