@@VeenasCurryworld good morning . Here is the recipe of madurai potato masala as told by a shop owner who is running his stall for 119 years. Heat oil in a pan or kadai. When oil is hot add fennel seeds . When it crackles, add turmeric powder+ fine chopped green chillies+ fine chopped shallots+ salt + water( 2 tumblers or 250 ml); allow to boil. Add a handfull of chopped mint leaves and chopped coriander leaves ( both 1 handfull each); when it boils and mixture turns glazy, add cooked / mashed potato (250 gms to 500gms)+ roasted besan ( 75 gms for 500gms potato) ; mix well. Allow to cook till masala leaves the sides of kadai or pan and comes to halwa consistency. Serve hot . ( Mash lightly so that you can feel chunks of potato while eating/ I am not a expert like you. My rendition of this recipe may not professional but exactly bas told by owner/ quantity as per your need) ; THANKS for this opportunity. Good day.
