I used hatch peppers in my rotel and it is fabulous. Hubby roasted them for me. Bless his heart it was 107 degrees outside when he did this. I think he definitely loves me.

I did this as a ‘salsa’ last year with roast, skinned chopped tomatoes, roast Anaheims, roast green bell peppers, spices and lime juice. the results were spectacular 🥰

One more note Leisa, while I have canned my version of salsa for 40 years (close to recipes) I would add what I thought it needed here and there. Your videos have reminded me to stop doing that, it isn’t safe and not worth the risk. I will be finding a new, tested and safe recipe and stick to precise ingredients. Never too old to learn, just because grandma did it and everyone lives, doesn’t mean it was correct! Thank you!

@@tstalraiders Doesn’t matter if you pressure canned or water bath canned. From my understanding, both require proper acid. Using a tested and proven recipe means that the recipe was tested for safety (botulism) using an exact amount of veggies, exact amount of time and or, at an exact amount of pressure. Our grandmothers used what they had. Just like the 70’s Colombo shows, with Dr.s entering a patients room with a cigarette in his/her mouth was considered the norm and ok, we now know different. Same with canning recipes 🥰

Rotel used to be non-diced tomatoes and it was great to be dipping your fritos in rotel cheese dip and get a big piece of tomato! And I have a bunch of tomatoes in the freezer. Yay. Thanks for this greatness!

What abt the "Choice Salsa" in the UGA "So Easy To Preserve" book? IT says 6 c chopped (specifies ¼ to ½ inch pieces) tomato (seeded, peeled, etc), 9 c diced onions and/or peppers of any varieties (both ¼ inch pieces), 1 ½c commercial lemon or lime juice, 3 tsp canning salt... Seems like that w/the variability allowed for choice of onions AND/OR peppers wld allow for a green chili rotel type product.... I wish we cld add pics to YT comments so I cld share from the book. My ag office lady recommended this book and it has a LOT in it that I haven't seen in my Ball or NCHFP books.

I love the freeze tomatoes to easy peel tomatoes. Can do a lot fast. Wish I knew about this before. Made salsa yesterday. Good good. My fingers didn't burn til later chopping jalapenos 😂. Forgot gloves. Though rubbing my hands in mustard and then salt worked again. Yes sounds weird but it worked.

Thank you for your diligent research on canning No-tell Rotel. I have a few cases of diced tomatoes that I bought at a case sale so all I need are the peppers. Making my own willl let me control the amount of heat for myself and my daughter's family.

I had NO clue Rotel had Cilantro, lol! I always just dumped it in when making a recipe, ha! I do have a "mock rotel" on my shelf. Basically... it was a salsa that was bland, lol.... it does have onions in it... but we LOVE onions, so I just use it anyway. Now... when that runs out, I will do THIS!

I am DANCING in my seat! I cringe when I need to buy Rotel- except sales, and still it's a 1.00 to 1.25 a can. I have a couple of recipes that I use it and one calls for an added pepper along with what is in the can..YES! I will put those peppers together and it's done. Hello again, I was just looking at your Amazon store and saw the Preppers Pantry Book you wrote. I was hoping to see a page on the inside to understand how to use the book. It sounds like a good thing as Martha Stewart would say, but is it possible to have you show a page to see what I am getting. I hate having to send things back to the stores, etc. Thanks so much for your wonderful videos. I did just order a bundle pack of the knives. I can’t wait to get them. My knives are so dull that I can’t even cut thru lettuce! True, tried to cut lettuce from a new Iceberg head and the knife would not cut it till o put all my weight on the knife. That gave my ailing brother a good laugh! Happy New Year

Well this is the first video of yours I wish I didn't watch. I've been canning it for years with the onions and I don't really measure anything. Just kind of plop it all into the jars and water bath. OOPSIE. I don't add the cilantro until I use it so I guess thats a plus. ( I use lots of jalapenos , makes a great Mexican rice ) Good news is I have almost no tomatoes this year so maybe I can forget about this video by next year. LOL. You da best !

I am grateful for this video for sure. I have more tomatoes than usual. Made salsa because we use it a lot. Made 4 cases of pints. Now on to the No tell, Rotel. Got plenty of chili peppers that I grew. Not making sauce this year because I already have too much of it.

I use the Mexican tomato sauce recipe from the same book. I just omit the onions and oregano. I hate peeling the peppers so sometimes I don't. It seems to be a quality issue vs a safety one. It is much cheaper than buying Rotel!

I've been doing this for 3 yrs based off your info. I figured I'm allergic to onions, I can safely omit the onions from salsa. You can safely omit spices and herbs. I figured what the hell I got this. I've been told by a few people in the group that I shouldn't do that because there is no approved method. My husband doesn't like the store Rotel anymore.

Thank you for the info, have never tried rotel but since everyone raves about it thought I would try it. Just a quick question- Can you add a teaspoon of dried crushed red pepper for a little heat if using green bell pepper or is adding spice altering the recipe unsafely?

Is there a reason you use water bath instead of pressure? The Mexican Tomato Sauce recipe mentioned in the recipe you have linked is pressure canning using significantly less vinegar? I’m not sure how that is reflected in the taste, but I don’t like vinegar that much and 1 cup seems like a lot!

Is it necessary to heat to a boil and simmer for 10 min or can it all be ladled into the jars without cooking? I prefer to start with a cold canner

I’m not kidding. I just fire roasted Anaheim peppers for the freezer. I did not weigh them. I have so many fire roasted peppers prepped. Canned, frozen, dehydrated and powdered. I wasn’t sure what to do with these. My dilemma is I did not weigh them. I have at least 5 pounds. I was going to freeze these. I have to wait for more to ripen and I can weigh them. I do have unprocessed poblanos and jalapeños.

Because if you are looking to make your own version of Rotel, Rotel doesn't have onions. I'm not a canner (starting shortly) but the idea that there's no "tomatoes and peppers" recipe approved is downright stupid, because yes, it's just salsa without onions.

I think the difference is that diced tomatoes generally have calcium chloride added to keep them firm and cube shaped, while chopped tomatoes have no calcium chloride.

well poo I just made 16 jars becouse i was told by someone it was ok to use onions only green chilies tomatos and onions . 5 days ago also salt and sugar one Teaspoon each they all sealed so are they all bad ? . i sure hope not. i cooked it for one hr before canning

anyone know if lime juice can be swapped for lemon juice? google says: lemon juice generally registers between 2.00 and 2.60 on the pH scale, while lime juice registers between 2.00 and 2.35. This means lime juice may often be more acidic than lemon juice. my preference is lime over lemon but i'm not a rebel, either.. lol.
