Perfect for a busy night, this Salsa Verde Chicken gives chicken some spice before it is baked in salsa verde and then topped with a melty slice of cheese. Dinner can be on the table in 30 minutes!
Ingredients:
2 Boneless Skinless Chicken Breasts about 8-9 oz each
1/2 teaspoon salt
1/2 teaspoon smoked paprika
1/2 teaspoon cumin
1/2 teaspoon garlic powder
1/4 teaspoon pepper
1 1/2 tablespoons extra virgin olive oil
1 jar 16 oz Salsa Verde (or use homemade)
4 slices Provolone cheese
1/2 cup fresh cilantro
Sliced avocados and rice for serving (optional)
