Ingredients for Bake:
Flour - 4 cups
Baking powder - 4 tsp
Salt - 1 tsp
Sugar - 1 1/2 tsp
Water - 1 1/2 - 2 cups
Method:
1. Sift all dry ingredients into a bowl
2. Mix until well incorporated
3. Make a well in the centre of bowl
4. Add 1 cup of water
5. Mix dry ingredients into water a little at a time
6. If needed add 1/2 cup of remaining water but be careful not to add too much
7. Knead dough until well combined 10-15 minutes
8. Divide dough into 16 equal balls
9. Cover with a warm damp towel and let rest 45-60 minutes
Ingredients for Filling:
Salt fish- 400g
Onion- 2 medium
Pimento- 10
Garlic- 8
Chive - 1 bundle
Chadon Beni/Culantro - 1 bundle
Hot pepper- to taste
Roucou - 1 tbsp
Coconut Oil - 2 tbsp
Salt
Black pepper
Method:
1. Boil salt fish until tender, strain and set aside.
2. Finely chop onion, pimento, garlic, hot pepper, chive and chadon beni
3. Heat sauté pan over medium heat
4. Add 2 tbsp coconut oil
5. Sauté onion, pimento, garlic and hot pepper for 5 minutes over medium to low heat
6. Stir in Roucou
7. Add salt fish and mix until well incorporated
8. Add salt and black pepper to taste
9. Set aside and let cool
10. Using a rolling pin roll out each ball into a circle measuring 3 inches
11. Place 1 tbsp of salt fish filling in the centre
12. Brush edges with water and seal
13. Cover with a damp cloth and allow to rest 15 mins
14. Heat oil to 350F
15. Fry until golden brown
