The witness final shape isn’t death, it is a state of nothingness. Living in one moment forever. It is reversible, as the first cutscene showed in the final shape where the witness had the final shape over the city and then pushed back

They didn't die. They basically decided to run away during the campaign which results in facing the witness in this raid called "Salvation edge" and as you guessed it it's the final boss in this raid Once defeated it then runs away again a second time and afterwards there's one very last mission called "Excision" you are paired up with 12 people in the mission and you officially kill off the witness from there for good.

the disect mechanics are seemingly making no sense, can anyone explain?

Lets say a statue holds a cone (triangle + circle), and the guy inside sees a triangle in the same character, then the outside people needs to "dissect" that cone shape to make it a pyramid so it matches outside 3d shape with inside 2d shadow. So, you need a circle to dissect that cone and swap it with a triangle (triangle + triangle = pyramid). When a statue is glowing it means is ready to swap a 2d shape with another statue. Basically, when you dissect, it pockets a shape for you, and it will be swapped with the next one. At the same time, the guys inside need to make their 3d shapes and dunk them in the statues.
