I heard once that McDonald's uses a 1/2 slice of American Cheese because in taste testing a full slice overpowered the mild flavor of the fish. It wasn't an economic decision, but one based on taste. BRILLIANT. I used to like the McDonald's version, maybe once a year. Good, not great. Your version looked so good I actually set out to make it. This is an absolutely great idea, a hamburger for people who like fish just as much as red meat. Tremendous idea to kick it up a few notches, above and beyond the McDonald's head start. So I just made it. Like everyone else, made a few tweaks. Used fresh cod, thin part of the filet that I always have trouble figuring out what I can do with. Man does not live by fish & chips alone. Instead of flour I used Cajun seasoning, ground pretty fine. Also added a few things to the Panko before blending. Screwed a little with the aïoli, too. All in all, an absolute winner. Really tremendous idea! Thanx!

Loved this video, and you highlighted my biggest complaint with the filet. It is the sandwich made with the least love. A part of a slice of cheese, never centered, and the fish is never as well. The tartar sauce as well. Once. Once, in a McD's in the Chicago airport watch my filet made with kove, perfectly centered, etc. Then dude tossed it on the chute and flipped it over. Great recipe and guidance. My only thought for improvement is that pan-frying the fish, as opposed to deep-frying, inevitably leads to a soggier and more oily crust. You can see the oil absorbing into the crust on the top of the fish, because no barrier has had a chance to form -- whereas with deep-frying at proper temperature (~375 degrees F), the hot oil would form a crust around the entire piece of fish, preventing additional oil from being absorbed into the coating.

IMO There's a brand of battered cod fillets made in the UK called "Young's". Most Walmarts carry them. Once you try them you will be ruined for McD's filet-o-fish and ALL frozen brands like Gortons, Mrs. Pauls, Van de Kamps, Trader Joe's, etc. Three important ingredients when making tartar sauce are chopped sweet pickles (relish), fresh dill and capers. Anything but the plastic American processed cheese product slice!
@haroldbrooks42354 жыл бұрын
I was going to mention the plastic cheese too

Every wonder why there is no such thing as British cheese? Yeah, I love this processed stuff. No kind of real cheese tastes good on fish. Cod is too delicate for real cheese.

Back in the 60"s and 70"s the fish had a whole slice of cheese and tons of tarter sauce, scrape some off and have dip for your fries!!!

It's because there's less fish. Demand over supply increases cost

LOL Yeah my sister works at McDonalds and I asked her why there is only half a slice of cheese. She said "The fish is expensive and to keep the cost down they only use hald a slice of cheese." I said OMG I think McDonalds could afford to give that half a slice of cheese to people.
