The Evo grill is the absolute coolest kitchen item ever. It's like a huge cast-iron pan. I never heard of it until I found Sam's channel. I definitely need to get one at some point. It looks so satisfying to use.

You could sprinkle into the butter/oil/smoked paprika mixture some ranch dressing powder for added flavor and as a thickener. I bet it would help with getting the spuds crispy too.

I made these today, intended as a side, with smoked turkey legs. The turkey legs needed more time than expected, and the tiny hasselbacks finished early. They were a great appetizer!

Specifically with the example of how no one has fries as an appetizer instead of a side, you're wrong! I've had nacho fries (fries with cheese sauce, jalapenos, and steak on top. Very tasty) as an appetizer at a taco place not even a month ago. Potatoes are so versatile that they cannot be relegated to being just a side
