It evaporates and if there’s anything left it’s so negligible that it doesn’t matter. The flavor stays though. I don’t drink, but I use wine, vodka and other hard liquor to flavor the food.

I cooked these tonight, my second or third time making them. Omg.. awesome, and they actually turned out nearly as pretty. The only change to the recipe was I added aboot (see what I did there?) one ounce of lime juice after the tequila. Damn. Truly awesome. And that compound butter is to die for. You are awesome, Sam. I made the compound butter and OMG its amazing. I made your best burger but didn't have everthing for the pickle sauce so I broiled the inside of the bun with the butter and bacon. This is truly an eye opener. i never thought I'd be that guy watching cooking shows.

I made this yesterday for my girl after we finished our bike ride. Getting the shrimp pre-shelled and pre-veined took all of the work out of it. This was VERY EASY to prepare and make. I used a Scripto lighter to flame up the tequila and she was very impressed. I've never cooked shrimp before and they turned out great! The two of us finished more than a pound of shrimp and most of the sauce and peppers. As always, Thanks Much! for the recipe and video.

For the folks that do not do alcohol, you can still cook with it because the alcohol itself cooks off and a very little amount of it is left. Trace amounts. I have been a non-drinker for six years plus now but I do cook with alcohol occasionally and when I do I use the little tiny airplane bottles that you can buy. The most recent time I did this was making your vodka pasta and I used two little airline bottles of vodka. Great recipes Sam, I love your channel.

Recipe needed, here you go: Tequila Lime Shrimp by Sam the Cooking Guy Compound butter 1/2 C butter 3 cloves garlic, pressed/minced 1 lg chipotle pepper minced Juice of half a lime 2 Tbsp Cilantro minced Pinch of salt and pepper Annnnd we mix Prepare: 1 chopped green and red jalapeno 2 Tbsp cilantro 1 diced Roma tomato 1/4 C green onion Directions: Hot cast iron pan Add 1/4 C of oil Dozen 16-20 Shrimp Splash of veggies Give it 2 minutes Add 1/4 C tequilla, ignite to flame Add big spoonful of compound butter Give it two more minutes Plate with more fresh herbs, Salt and pepper

@@uslalas22 a match might work. He also mentioned something about “the stove flame would have taken care of it by itself” if he was cooking it indoors, by which I assume he means on a gas range. It does seem odd to me that simply cooking it on a gas range would ignite it, but I’ve never cooked using flaming alcohol, so maybe it would.

Made this last night. Dear Lord! After scooping all of it out of the pan and putting in a bowl the flavor only got better as it sat in the remaining liquid for about five minutes. This will be a regular staple going forward. Thanks for the humor and flavor.

Some people don't cook with alcohol for a wide variety of reasons, but there's always a substitute. Think about what the alcohol is doing for the recipe. Wine adds fruity notes and complexity, so consider substituting a 50/50 mixture of stock and vinegar (cider,malted, wine or balsamic). Tequila or whiskey add umami or sometimes smokey notes, so consider adding a splash of mushroom steeping liquid or a drop of liquid smoke, or maybe a tiny pinch of cumin. Rum adds sweetness and a touch of spice, so consider a drizzle of molasses. Gin adds herbal and floral notes, so maybe a splash of homemade herbal tea with the flavors you want to emphasize. As someone who lives with a recovering alcoholic, I can't bring alcohol into the house so I've learned to go with the spirit of the ingredients rather than the literal recipe.

Made this last night and it was great. Used what was left of the shrimp to make quesadillas for lunch today. Used the compound butter to crisp up the outside of the tortillas. It was over the top good that way!

I made this dish last Saturday night for dinner & it was really good. I did not have chipotle pepper in adobo, so I used a good amount of red pepper flakes in the compound butter. I used a big glob of the butter in the pan to finish the cooking and it made a wonderful pan sauce. My wife roasted some cauliflower and the pan sauce was delicious on the that tooI . It took me about 30 minutes to make the butter compound and chop everything for the shrimp. Cooking was 3-4 minutes in a VERY hot pan. I used one pound of cleaned shrimp with the tails on. It was a great dinner. We had a few shrimp left over and I made quesadillas for lunch the next day with the cutup shrimp & the vegetables from the pan. Outstanding use of leftovers.

It evaporates over time and heat plays a big role. It’s not always instant. This way it does fairly quickly but baking or cooking on stove top can take up to an hour or more.

I was going to make the sriracha scallops but decided it was too much work so, just did both in the tequila lime sauce. These were just awesome and easy. Love it! This one is a show stopper...I live in Louisiana, so I'm always looking for good shrimp dishes - something other than Cajun or Creole for the sake of variety. I didn't have a red jalapeno, so had to use two green, which was fine, but the red would've made the presentation even better. Plenty of the Chilpotle/garlic/lime/cilantro butter left over to do something else with this week. BTW, I ordered that exact butane torch just for this dish, and it made me look like I knew what I was doing! Thanks for doing this.

Sam I made the Tequila Lime Shrimp today. My local market was out of the larger shrimp (I made the mistake of shopping at 4pm on Saturday). So I had smaller shrimp but it went well. Used the same tequila. I could have added alot more jalapeno and chipotle, i had a very subtle undertone of spice. But was very good! The compound butter is sitting nicely in my fridge waiting for the next recipe!!!

I made this last night with a few substitutions: red bell pepper instead of red jalapeño, chipotle powder instead of chipotle in adobo, and big u12 shrimp. Really good and really easy. It was fun lighting up the tequila!
