We really enjoy Lamb. Loin chops, leg of lamb, rack of lamb is all great. That recipe looks outstanding Sam. I just made Lamb Loin Chops in the air fryer with a great Olive Oil, Crushed Rosemary, Garlic, Fresh Cracked Black Pepper and it was Delicious!

As an Aussie lamb cutlets are it. We love our lamb. Check out the Australian lamb ad for 2023, it’s the best. Definitely going to get your knives one day. Continuing with the lamb theme you should try…. Slow cooked lamb shanks or Lamb and Rosemary pie it’s awesome. But as an Aussie I would love to see you do an Aussie favourite dessert that you always get at the bakery when you get your classic pie.. and that is vanilla slice. It’s the best.

@Sniperboy5551 don't come to Australia then! It's exceedingly expensive! That rack would have cost around $AU45. Way out of reach for most Australians. The ridiculous part is, we are a major sheep growing country, yet it's THE most expensive meat by far. There are 10 times more sheep than people. Someone is making big money from it and it's not the farmers!

I've only had lamb a couple times, it was fine, I just generally don't think of it but just yesterday a friend of mine was mentioning how it is cheaper then beef in my area right now. Once it warms up enough to use my grill I'll give this a try.

Love, love love lamb. The best lamb I've bought in the US comes from a farm in New Mexico called NIght Sky Lamb. They breed Dorper lamb which in my humble opinion is the absolute BEST tasting lamb money can buy. I highly recommend you check them out. If someone says they don't like lamb, this lamb will convert them!

What you’ve just done… I do this with a rack or as per the recipe a deboned leg. Enjoy from South Africa 😉 INGREDIENTS BUTTER * ½ cup (1 stick) unsalted butter, softened * 1 tablespoon finely chopped fresh Italian parsley leaves * 2 teaspoons finely chopped fresh mint leaves * 2 large garlic cloves, minced * ½ teaspoon kosher salt * ¼ teaspoon freshly ground black pepper MARINADE * ⅔ cup extra-virgin olive oil * ½ cup finely chopped fresh Italian parsley leaves and tender stems * U ⅓ cup fresh lemon juice * 1½ tablespoons kosher salt * 1½ tablespoons paprika * 2 teaspoons ground cardamom * 4 garlic cloves, finely chopped * 1½ e ground cumin * 1½ teaspoons ground ginger * 1½ teaspoons ground turmeric * 1 boneless leg of lamb, about 5 pounds, butterflied and trimmed of excess fat INSTRUCTIONS * Combine the butter ingredients. Set aside. * Whisk the marinade ingredients. Reserve and set aside one-half of the marinade to use for basting the lamb on the grill. Pour the remaining marinade into a large, resealable plastic bag. Place the lamb inside the bag, press the air out, and seal tightly. Turn the bag to distribute the marinade, place in a bowl, and refrigerate for 2 to 4 hours, turning occasionally. Remove the lamb from the bag and discard the marinade. Allow the lamb to stand at room temperature for 15 to 30 minutes before grilling. * Prepare the grill for direct and indirect cooking over medium heat (350° to 450°F). * Grill the lamb, fat side down, over direct medium heat, with the lid closed, until nicely marked, 10 to 12 minutes. Turn the lamb over and grill for 5 minutes more, basting the lamb with the reserved marinade. Then move the lamb over indirect medium heat and grill, fat side up, with the lid closed, until an instant-read thermometer inserted into the thickest part of the lamb registers 125° to 130°F for medium rare, 20 to 30 minutes more, basting occasionally with the reserved marinade. Remove from the grill and let rest for 5 to 10 minutes. * Cut the lamb across the grain into thin slices. Melt the herb butter, and then drizzle it over the lamb. Serve right away.

Lamb is a staple here in Australia. So many US folk don't like it because they think it has a gamey taste. No, deer has a gamey taste! You did that rack proud. Cooked perfectly. Oh, here, we call the cut up end result bits cutlets. Chops are different. Although some here will call those, chops with handles. They are also great breaded and shallow fried.

@tritontransport I didn't know we exported to the US. Great that you love our baby sheep! We love it too, but it's so expensive these days it's a luxury item. It's interesting that it tastes different depending on where it comes from. I wonder why? Could it be what they were fed, or their living conditions? Aussie lambs roam in open land, eating what they like before being shunted onto the truck. Maybe the areas you describe they are force fed certain foods?

Btw my entire family will sit down together at times and watch some of your videos. i have been following your channel for years. My daughter has grown up watching and calls you Sam the cooker. It would be cool if you guys did like a surprise ingredient thing. Like spin a wheel to get random ingredients and see what kind of master piece you can create.
