Great video. Loved the way Sandor shared his spiritual journey, that eventually lead to him learning so much about fermentation processes and then sharing that with others. Would love an extended version of this video, 12 minutes wasn't remotely long enough, I could watch this for hours.

How difficult is it to make tempeh and miso?

I'm just a novice in fermentation, but I keep finding that MOST products are pretty easy to make. Miso and tempeh require using specific starters that you would probably want to buy rather than make from scratch (as the starters require the cultivation of very specific bacteria); both products require a bit more strict temperature control than something like sauerkraut or kombucha, but you can readily find everything you need at a home depot or other hardware store if you don't live in a climate where you'll be able to regulate that naturally. Disclaimer that I haven't attempted either of these yet, but I've been studying up - I consider them in the "Intermediate" category of fermentation recipes and will be attempting them sometime this year. Since your comment is over a year old - did you ever end up giving them a go?

Understanding that the current food industry is set upon making people ill is indeed a revolutionary act. Everyone, I mean EVERYONE, should make fermented food, if nothing else to get a little protection from the constant stream of toxins from processed food (plastics in the food chain, antibiotics antifungals pesticides in produce and meat, all sorts of mycotoxins in everything sold in the supermarket), electromagnetic radiation and pollution in air food and water. It's not a cure all, but better than nothing. Why do you think the epidemics of autoimmune illnesses, cancer, allergies, autism etc is happening? Thank you Sandor Katz for popularising this simple practice.
