Wow, so many things I had not considered. I'm hoping to buy my first mill this year and start my journey so thank you so much for all these little tidbits! I probably wouldn't have ever thought of... one example, starting your mill up first!

I have a different mill but love milking my own flour! It makes bread taste so much better. The bread turned out beautiful!

I haven’t tried it myself. I sometimes use almond milk in recipes if I’m out of cows milk. I’ve had varied results myself with substituting it. It’s worth trying!

I haven’t tried it without using eggs. I sometimes use freeze dried eggs that are reconstituted but not without.
