I always take the Kotteri Se Abura bowl at Sanpoutei because this style is a great way to showcase their niboshi broth. I don’t believe anyone else in Singapore does a bowl with Se Abura other than those used in Brothers Ramen’s Jiro-style bowl.

I recommend going to these ramen/tsukemen shops since they're great and have a high score on Tabelog, a Japanese food review website (by going into the ramen category and sorting by their overall ranking). Menya Takahashi (麺屋 髙橋) - Tsukemen with cold noodles in Sapporo. IRUCA-Tokyo- Roppongi (入鹿TOKYO 六本木) - Special Yuzu Shio Ramen. Ramen Iida Shoten (らぁ麺飯田商店) - Shio Tsukemen, highest ranking ramen shop in all of Japan, in Kanagawa. Seijo Seika (成城青果) - Shio Ramen started in June 2020, yet it was already one of the highest-ranking ramen shops in Tabelog, in Tokyo. Ramen Maikagura (らーめんMAIKAGURA) - Tori Paitan Chicken with white truffle oil and a poached egg in Tokyo. Chuukasoba Uemachi (中華そば うえまち) - Has one of the best shoyu ramen in Osaka. Dateya (伊達屋) - Shoyu and shio ramen in Fukushima. Stamina Ramen Suzuki (元祖スタミナ満点らーめん すず鬼) - One of the most powerful ramen in Tokyo.

Torasho’s Tsukemen is on the sweeter side though. There’s almost a kind of Bak Kwa profile the last time I had it… but tbh it was a meh bowl for me overall.

There is one near brothers ramen - enishi is good too, their tan tan noodles is fantastic. Hope u can do it into the ramen series too. Ramen taisho in bukit batok also another good one. Tsukemen in singapore wise, i felt menya musashi actually is not bad althought it has no popularity in singapore, in term of value to money (free upsize of noodles, which also have similar concept in japan tsukemen restaurant ) and the taste, probably its the best.

"Kotteri" just means "thick/rich" soup as opposed to "Assari" which is a light broth. The term Se-Abura (背脂) though, it's my first time seeing it ever but apparently it just means lard (literally "back fat" of pork).

Alderic, I’m guessing the “sweetness in the broth” you detected could definitely be from veggies since a lot of stock bases for ramen/tsukemen do start from carcasses boiled together with leeks, onions, vegetables etc that lend their natural sweetness. Or could also be mirin hahhaha

Some ppl may kill me. But my first ever Tsukumen experience was a cold thick broth in Tokyo at Zundonya. Being cold made the broth thicker and stuck to the noodles much better. I had the Tsukumen from Sanpoutei hot at their store. And for the heck of it, I brought home one to eat cold. And the cold one won hands down. The broth really thickened like mad and coated each noodle in this salty goodness. As such I have never eaten at a sanpoutei shop ever again. I just da Bao EVERYTIME.

noo, don’t end the series! that aside, glad that you went to Sanpoutei’s Holland V outlet from my previous recommendation and i’m glad that it didn’t disappoint. i had a lot of fun watching your ramen series since the start, and i need to try out ramen-ya during that episode. small places like these needs more love and support tbh and good ramen in sg needs to be more known. so far most of your recommendations were well deserved. looking forward to find out the ramen store you’ll be trying out in the next and final episode, and as the saying goes, all good things must come to an end. 😢

Torasho was good before it became torasho. I forgot the name of the old shop but it was at orchid hotel and Clarke quay before that. Then it had a very strong, balanced and flavorful broth with hints of citrus and they even had yuzu flavor soup wari. After rebranding the broth became cloyingly sweet over powering in flavor.

@@ILuvKingdomHearts Thanks, it was my favourite place for tsukemen in Singapore. The broth is reminiscent of Tomita albeit I only tried the branch in Kitte Marunochi. Fond memories, don’t know why it changed so much as the boss is the same Japanese guy iirc.

@@mg79Agree, it was one of my favourite tsukemen and back then I crave for it every month. But ever since it became Torasho, I only went back twice in the past 2-3 years. Really don't understand cos like you said, the original chef is still there. Gyozas are good tho.
