Either clicking valves, slides, or both

+kevin belo They snap the horns so quickly it creates a vacuum under the horn, on account of the pressure difference, and the sound comes from air collapsing back unto that void.

+kevin belo The tuba line is a combination of squeezing and releasing the valves along with slamming the hand down on the snaps

The way the horn is held and motion that's taught causes the third slide on the trumpets to come out slightly. When the horn is stopped, the squeeze of the left hand pulls that slide back in and it clicks. It's not really an intentional thing, just a by-product of the motion and the squeeze to the stop the motion. On the tubas, the left hand actually changes where it's grabbing. It's the grab of a different pipe that you hear. The valves create some sound but its not the obvious click you hear. Doesn't really happen as obviously on baritone and mello.
